Here, though ‘data’ is plural, ‘the amount’ is singular. Also, the sentence gives an insight of a thing that would happen, not something that has happened. So, ‘is’ is correct here. The amount of data stored is so vast that even if we put a number on it, it would be beyond our comprehension.
